Cookie Time

One of our holiday traditions is to make lots and lots of Christmas cookies. Sugar cookies, ginger snaps, bon bons, toffee ... In the pictures above and at the bottom M. and her grandpa are making (and testing) Crackle Cookies, in the middle picture are toffee squares.

I think we've made seven treats so far this year, with many more in the works. One candy, toffee (tastes just like a Heath bar), I've had to make twice because the first batch disappeared far too quickly. Here's the recipe, but be warned that this stuff is addictive and has absolutely no nutritional value.

Toffee

1 lb. butter
2 cups sugar
1/2 cup water
1 tsp. salt

Combine all ingredients in saucepan and heat to 300' (use a candy thermometer, the mix will change color to dark orange/brown).

Pour onto a cookie sheet or sheetpan. Cover with 16 oz. semi-sweet chocolate chips, spread chocolate when it melts. Cool in refrigerator.

  1. Know what is really good? Take your toffee recipe and pour it over a layer of saltines (even layer on a cookie sheet), pop in the oven at 400 degrees for 5 minutes. Then spread with the chocolate chips and let cool in fridge. OMG little slices of heavenly goodness.
