Soup's On

I love the tomato basil soup at Jason's Deli ... actually, I like a lot of things there (the hummus on the salad bar is awesome with veggies!), but I especially like the tomato basil soup. Unfortunately for me we're trying to cut restaurant dining out of our budget so I had to find an alternative tomato soup, and I have.

This recipe is super easy, really good and very inexpensive if you pay $.16 a can for your diced tomatoes and use free butter.*


Tomato Basil Soup

3 cans diced or crushed tomatoes
4 c tomato juice or chicken broth (I use broth)
1 small can tomato paste (leave it out of you don't have it on hand)

Simmer these together over medium heat for about 30 minutes. Puree in small batches in blender or food processor with 14 basil leaves ... the soup should be very smooth.

Add:
1 cup heavy cream
1/4 lb. butter
salt and pepper to taste
1-2 tbsp. lemon juice, if desired

Heat thouroughly, being careful not to boil.

That's it. Easy peasy. Feel free to experiment with garlic, onion, crushed red pepper, and whatever else floats your boat.
